Mexican Corn [pan] Cakes

In celebration of my parents 46th anniversary [yes 46th, no typo] I wanted to create something special. They had been traveling all week and were arriving home late in the evening. I figure what better then to come home to a mini Mexican fiesta.

I was thinking of a yummy Mexican corn cake for both dinner and dessert. Up to this point I have only had fried Mexican corn cakes, I knew that fried cakes were not something I wanted to do thus I went on a online search. Luckily, I found this recipe on www.epicurious.com

The cakes turn out light and fluffy and are simply delicious. The bonus, they taste friend without all the fat, it rocks!!

The original recipe serves this for breakfast with eggs, chorizo and salsa, it looks divine. I first served dinner with some beef, my Cheesy Black Bean Mash, sour cream, lettuce and avocado....


Then I sauteed some fresh peaches with a little butter and sugar and served along some vanilla bean ice cream. Again, delish!


Mexican Corn [pan] Cakes
3/4 c Masa Harina (corn tortilla mix) or any Masa Flour1/2 c all purpose flour1/2 c yellow cornmeal1 t sugar1 t salt1 t baking powder1/2 t baking soda1 1/2 c buttermilk2 large eggs4 T (about) corn oil


Preheat oven to 350°F. Spread Masa Harina on heavy baking sheet. Bake until fragrant and golden, stirring often, about 15 minutes. Cool Masa Harina. Reduce oven temperature to 250°F.


Sift Masa Harina, flour and next 5 ingredients into large bowl. Whisk buttermilk, eggs and 3 tablespoons oil in medium bowl to blend. Add buttermilk mixture to dry ingredients and whisk just until blended (batter will be thick).


Lightly coat griddle with oil. Heat over medium heat. Working in batches, spoon scant 1/4 c batter onto griddle. Using spoon, spread batter to make 2-inch-diameter pancake. Cook until bottom is golden, about 4 minutes. Turn and cook until second side is golden, about 3 minutes. Transfer to baking sheet; place in oven. Repeat to make 12 pancakes total, brushing griddle with oil as needed.
