Middle East Salad - Regional Recipes

Mmmm, Middle Eastern foods are one of my favorites! I regularly make my own hummus, tabbouleh and falafel, but I thought those would probably be common recipes submitted for this theme. Instead I've chosen this super simple dish that I've previously posted on my other blogs. It is so yummy, I couldn't pass it by for Regional Recipes this month. I know it sounds a little odd but I promise, it's absolutely delicious! It's the perfect combination of all different colors, textures and flavors - it's like a party in a bowl! Just combine a can of rinsed chickpeas, about a cup of edamame beans, 1/2 cup dried cranberries. Drizzle with olive oil and a splash of balsamic vinegar, sprinkle with sea salt, fresh ground black pepper. Toss and refrigerate until chilled. That's it, enjoy!related searches : Middle East
