Mint Dark Chocolate Brownies
- Ingredients: 1 1/2 Sticks Butter, melted 1 1/2 Cups Granulated Sugar 1 1/2 Teaspoons Vanilla Extract 3 Eggs 3/4 Cup All-Purpose Flour 1/2 Cup Cocoa 1/2 Teaspoon Baking Powder 1/2 Teaspoon Salt 1 Cup Dark Chocolate Chips 1 Cup Mint Chips 15 Andes Mints, chopped -Directions: Combine butter, sugar and vanilla in a bowl. Add eggs, and beat well. Combine flour, cocoa, baking powder and salt. Gradually add flour mixture to butter mixture, beating until well blended. Spread batter evenly into a prepared 9x12 dish. Bake in a pre-heated 350 degree oven for 35-40 minutes. Once you pull brownies out of the oven, immediately sprinkle on mint chips and wait about a minute then with a spatula, spread them evenly over the brownies. Once the mint layer is set, melt your dark chocolate chips in the microwave in 30 second intervals until they are melted. Pour over mint layer and smooth evenly over the brownies with a spatula. Sprinkle on chopped Andes mints. Wait until chocolate is set to cut.
