MINT RICE(Pudina rice/Mint pulao)

INGREDIENTS





Basmati or Masoori rice----------2 cups(soak for 30 minutes)

Mint leaves-------------------------- 2 cups

Ginger garlic paste-----------------1 tsp

Green chilly---------------------------2,slit lengthwise

Onion-----------------------------------1/4 cup,sliced (optional)

Cinnamon------------------------------1 inch piece

Cloves----------------------------------2

Cardamom-----------------------------2

Bay leaf---------------------------------1

Saunf------------------------------------a pinch

Garam masala powder--------------a pinch

Ghee or oil------------------------------1 tbsp

Water or vegetable stock-----------as needed

Salt to taste





METHOD



Grind mint leaves with needed water and filter it through a sieve.Keep it aside.
In a medium heat vessel add a tbsp of oil or ghee and saute sliced onions till it becomes soft and brown.You can also deep fry the onion if needed. Keep it aside for garnish.Note: If you are not using onion then you can reduce the oil to 1/4 tsp.
Now add whole garam masalas (cinnamon,cardamom,cloves,bay leaf,saunf) to the above pan  and saute.
Next add green chilly and ginger garlic paste.Saute in low flame till the raw smell goes.Do not burn it.
Then add soaked and drained rice.Saute the rice till a nice aroma comes.This prevents rice from sticking together.
Then add mint juice followed by water or vegetable stock. So the ratio will be like this(for 2 cups of rice= 1 cups of mint juice: 1 cup of vegetable stock: 2 cups of water)
Add needed salt and cook it covered. Add a pinch of garam masala powder to it if needed.
Once rice is done,transfer to a serving bowl and garnish with fried onions,nuts and mint leaves.


Note: Adding vegetable stock gives a rich taste and texture to the rice/pulao.If not using, add 1 cup of mint juice and 3 cups of water for cooking 2cups of rice)
