My Big Fat Greek Fusion Recipes: Pizza and More...
There are two types of Greek Pizza - the one with the stereotype Greek ingredients, such as kalamata olives, feta cheese, cherry tomatoes, gyros meat, and spinach. The second one refers to the style of pizza crust regardless of its toppings. Since I don't have a big oven in my dormitory, which makes me impossible to make the Greek-style crust, I made the common, yet still yummy!! We've been crazy about mediterranean stuffs lately - the ingredients are healthy and still delicious. We never run out any of these ingredients, because we could almost do anything with it - pasta, salads, and canapes. Greek Veggie Pizza Ingredients 2 cups shredded mozzarella cheese 1 large clove garlic, crushed 1 medium sized onion, diced 1 cup blanched spinach 1/3 cup mushrooms, chopped 1/3 cup Kalamata olives, sliced 1/3 cup feta cheese crumbled parmesan cheese 4-6 cherry tomatoes 1/2 cup tomato sauce herbs such as rosemary, mint, oregano, thyme, etc 2 personal pan pizza crust olive oil balsamic vinegar (optional) salt and pepper Procedure * Preheat the oven. * Prepare all the vegies. Slice the kalamata olives, mushrooms, and cherry tomatoes. Shred the mozarella cheese. * Make the pizza sauce. Heat 1 tbsp olive oil, then saute garlic and onions until tender. Add the tomato sauce or puree. Season with a dash of different herbs and salt. Add a tbsp of balsamic vinegar if desired. Simmer for a few minutes and keep stirring to prevent the sauce from burning at the bottom. Remove from pan and transfer in a bowl. * Assemble the pizza. Grease the cookie sheet. Spread the pizza pan with the cooked pizza sauce, by scooping a generous amount and placing it in the middle of the pan, circling it out, using the base of the ladle to spread the sauce evenly. Top the sauce with mozarella cheese. The more the merrier... ;) Place the other toppings such as the blanched spinach, olives, cherry tomatoes, onions, crumbled feta cheese etc. Sprinkle with herbs, salt and pepper. Drizzle with olive oil then bake in the oven for 15 minutes. Remove from the oven, sprinkle parmesan if desired, and a little bit of olive oil. Enjoy while cheese is still gooey and stringy!! * * * * The thing about Greek ingredients, is that they're versatile in the kitchen. As long as you have the fresh ingredients, you could whip up something delish, that you could equally enjoy like what you're having in any gourmet restos. Food doesn't really have to be fancy and complicated and delicious in other words. Since we only made two personal pan pizza, we had some left over ingredients. I just boiled some penne and tossed some of the remaining ingredients, added a few new ones, thus Spinach and Feta Penne..... So basically, these ingredients can be fused and paired up with another cuisine, such as Italian, American, as well as other Mediterranean dishes.
