New york roll with biscoff speculaas - quick and economical recipe
Our new favorite pastry? The New York Roll! Also called "Lafayette roll", it's a rounded croissant stuffed with a delicious cream. And here, we bring flavors of speculoos! Whether it's breakfast time, snack time or brunch, we can assure you that you will be delighted to taste this wonder ;-) We explain everything in detail in the recipe below

Materials
- 1 piping bag
- 1 electric whisk
- 1 spatula
- 2 oven safe cookie cutters (3.9 inches diameter)
- 1 gratin dish
- parchment paper
- 1 brush
- chopsticks
Preparation
- Start by rolling out the croissant dough on a cutting board then folding it in half.
Cut 3 strips from the dough. Then cut the third strip in 2. - Roll a strip on itself to form a roll. Add half a strip afterwards. Do the same with the rest of the dough strips.
- Place the two rolls on a baking tray covered with parchment paper. Brush beaten egg all around the rolls and sprinkle with brown sugar on top.
- Place greased circles around the rolls then place a large gratin dish on top.
- Bake the rolls in an oven preheated to 390°F (200°C) for 25 minutes. Then remove from the oven, carefully remove the gratin dish and leave to cool.
- Place the cream, mascarpone, whisks and bowl in the freezer for 15 minutes. Then pour the cold ingredients and the speculoos paste into the cold bowl.
- Mix everything with an electric mixer until it forms a thick whipped cream. Transfer the mixture to a piping bag (or freezer bag).
- Insert a chopstick into the roll twice vertically so that you can garnish it generously with the piping bag. Smooth the top with a spoon. Do the same with the second roll.
- Decorate the top of the rolls with speculoos spread, sprinkle with crumbled speculoos and place a whole speculoos on top.
- It's ready! Enjoy!
Observations
How to store the New York roll?
Place it in a cool place in an airtight container. You can keep it for a maximum of 3 days. However, we recommend that you enjoy it the same day.
Can I replace the speculaas whipped cream?
You can replace it with classic whipped cream or with vanilla pastry cream for example. Find our NY roll with pastry cream right here.
Can I replace Biscoff speculaas cookies?
Feel free to modify the recipe and replace them with your favorite cookies!
CanI make New York Rolls with classic puff pastry?
Yes it is possible, however the cooking time will be longer. We recommend using croissant dough. You can ask for some from your baker or make it at home.
Can you make more New York rolls with a box of croissant dough?
If you have 4 circles, you can simply cut the croissant dough roll into 4 and use the already formed rolls. Watch the cooking time which will be shorter.
