My Original Vegan Brownie Recipe

Everyday a new vegan recipe for the month of November.


So I have always loved baking and experimenting in the kitchen, it is very rare when I follow a recipe to fidelity. In college I started having tummy trouble, probably stress induced, after college when I had more time I started logging what I ate and paying attention to what seemed to be causing my symptoms. I diagnosed myself with lactose intolerance and stopped consuming milk, butter, cream, etc. I still ate eggs (only when I felt obligated, I never liked them). My experimenting in baking started while trying to make my favorite desserts lactose free. Then I started trying to make my baking more healthy and even nutritious by adding more fiber, vitamins and minerals and removing all refined sugars. Consistently I exchanged whole wheat flour for all purpose white.



Just recently, about three weeks ago, I got a blood test for food allergies and found out that that wheat flour I thought was so good for me was in fact more like poison. Many of the recipes I have been posting are pre-allergen awareness and I haven't had the time to experiment replacing the offending foods, but I will. Apologies to my gluten free friends. The good news is that the recipes are vegan and free from refined sugars! While I am confessing, I would like you to know that it has been awhile since I last baked most of these recipes. My Original Vegan Brownie Recipe



1/4 cup buckwheat flour

1/4 cup whole wheat flour

1/4 cup wheat bran

1/4 cup dark rye flour

1 cup soymilk

3 tbsp cocoa powder

12 tsp psyllium husk powder

1 tsp baking powder

1/4 block firm lite tofu

1 can orange juice concentrate

1 fl oz Kahlua



1. Combine dry ingredients.

2. Blend liquids, including the tofu.

3. Slowly add liquid mixture to dry mixture.

4. Pour into a greased 9x9 pan.

5. Bake at 350 for 30 minutes.
