One of Michael's Favorites
This is one of my husband's favorite dishes which works for me because it is easy! It does require that you have a lot of ingredients on hand but buy them once and they'll last for a long time. Boil 6oz of the noodles of your choice. I recommend either soba or udon. When cooked to the desired doneness, drain and set aside. While noodles are cooking, whisk the following ingredients in a large bowl (serves 2): 1T peanut oil 2Tpeeled, minced fresh ginger 2 garlic cloves, minced 2T sesame oil 1T smooth peanut butter 2T soy sauce 2T rice wine vinegar 1T honey 1/2 tsp Sriracha (or more if you want it spicier) 1.5 tsp freshly squeezed lime juice Pour mixture over drained noodles and toss together. If you'd like, you can add some chopped red or yellow bell pepper, avocado, scallions, toasted peanuts - whatever you like. Add more Sriracha or lime juice to taste. These noodles are best served cool or slightly warm - not hot. Enjoy!
