Ingredients:
1 medium (190g) Chinese bitter gourd - remove skin and sliced
1/2 (abt 100g) red capsicum - sliced
I packet (abt 80g) processed gingko nuts (already soaked and soften)
2 eggs
7 garlic - sliced
4 shallots - sliced
1 stalk onion leaf - sliced into small pieces
1 tsp sesame oil
1/2 tsp Chinese wine (optional)
3 tbsp oil
salt to taste

Preparation:
When oil is heated, break in the eggs and scramble lightly. Remove and keep aside.
In the same oil, saute the shallots and garlic for couple of mins.
Add in the bitter gourd and capsicum and stir in.
Pour in abt 3 tbsp of water to soften the veg a little bit.
Once this is done, add the gingko nuts, sesame oil, Chinese wine and salt to taste.
Stir to mix in all these ingredients.
Lastly, add the scrambled eggs and sliced onion leaves.
Stir a couple of times before removing from heat.
