Potato & Pumpkin Subzi
I came across this recipe in my mom`s recipe diary sometime back, found the combination very odd & so just brushed it aside..The other day I saw a similar dish on the television & my mom immediately told moi that she had made this many years back & we had all loved it! I instantly ran to retrieve this recipe from my mom`s diary, bookmarked it & finally we made it last Sunday..Served it with hot 'pooris' & it was one superb meal!
For this dish you will need the following variety of pumpkin : Ingredients : Equal quantities of potatoes & pumpkin, both wash, peel & chop into bite sized pieces Water (about 1 cup water for 450 gms each of potatoes & pumpkin) 3-4 tbsps of ghee (clarified butter) 1 big spoon of curd salt to taste 1 tomato, chopped 1/4 tsp amchur (dry mango powder) a pinch of sugar or to taste Whole Spices you will need for this are : 1/2 tsp mustard seeds 1 tsp kalonji (onion seeds) 1/2 tsp methi (fenugreek) seeds 1 small piece cinnamon 1-2 green cardamom 1 bay leaf Spice powders you will need are : 1 - 1 1/2 tsp coriander powder 3/4 tsp (or less) cumin powder 1/2 tsp turmeric powder Red chilli powder, to taste (a tsp or so) Method : * Heat ghee in a thick bottomed pan, add the whole spices & let crackle. * Add the spice powders, curd & mix. * Add the tomato and saute till tomato softens. * Add the potatoes & pumpkin, little salt, enough water to cook them & cover and cook for about 10 to 15 mins. * Finally add the sugar, salt (taste and add), amchur.
