Pretty Little Things

Ahhh, It's my 100th post today! 

We're in October now, and it's a bit freaky how quickly this year is passing, it's nearly Christmas!

 
These aren't your typical autumnal pictures, but this is my autumn, lol. 

   




I had a great salad yesterday. Although the picture is not so great, it would be a shame not to post the recipe.
It's from Miss Dahl's Voluptuous Delights: Recipes for Every Season, Mood, and Appetite. It was a really tasty dish that i would definitely make again.

Quinoa Salad with Tahini Dressing
500ml/2cups of vegetable or chicken stock/broth(i used a stock cube)
180g/1cup of quinoa
1/2peeled cucumber, chopped
2spring onions, finely chopped
1plum tomato, finely chopped
1red bell pepper, deseeded and chopped


For the dressing
4tbs olive oil
juice of 1 lemon
2tbs of soy sauce
2tbs of tahini(sesame seed paste)
1/2clove garlic, peeled and chopped
SERVES 2
Bring the stock to the boil, add the quinoa, cover and simmer for 10-15mins. 


Make the dressing-everything in a blender, and you could maybe add a little honey to taste. 


When the quinoa's ready, fluff it, put the veggies in, then douse it with dressing. A few chopped mint leaves could be a great on top.
If the dressing is too much, you can keep it in the fridge for up to a week.
This was really tasty and i added a bit of sliced turkey to it.
