Red Lentil Burgers
Good morning and happy Friday to everyone. I am soo incredibly excited its finally the weekend! I just got back from an awesome kickboxing class and literally ran to my computer because I am that excited to share this recipe with you.
Ingredients: 1 C red lentils 3 c water or vegetable stock 1 T olive oil 2 carrots 2 ribs celery 1 small yellow onion 1 C panko bread crumbs 1/2 c walnuts chopped 1/2 tsp salt 1/4 tsp red pepper flakes 1 tsp Trader Joes 21 seasoning salute (or whatever spices you like) 1/3 c fresh parsley Directions: Preheat oven to 400 degrees. Bring water or stock to a boil in a large pot, add lentils, reduce heat and simmer 25 minutes until tender. Drain lentils and add to a large bowl, set aside. Heat oil in a large skillet, add onion, celery, and carrots, saute 10 minutes or until softened. Once soft remove from heat and add to lentils, mix together. Stir in TJs seasoning or whatever spices you choose. Add walnuts, bread crumbs, salt, red pepper flakes, and parsley. Stir together until well mixed. Using an ice cream scoop measure out mixture to form patties, place on a baking sheet, brush with olive oil and bake 10-15 minutes per side until browned.
Questions: Favorite way to cook lentils? I lovee lentils in burgers sooo delish! Ever had black eyed peas? Favorite recipe? I am currently boiling some black eyed peas but have never had them before so i’m not exactly sure of a good way to fix them.. suggestions?
