Red Lentil Burgers

Good morning and happy Friday to everyone. I am soo incredibly excited its finally the weekend! I just got back from an awesome kickboxing class and literally ran to my computer because I am that excited to share this recipe with you.


As I write this I am sipping on a cup of my new favorite tea hoping it will possibly help clear up my skin. Anyone have recommendations for natural acne cures? For some reason since switching to all natural products my skin has been acting up and I cant get it completely clear :( I have never really had problems with pimples before but lately its driving me crazy! Anyways enough about pimples time to talk food.


Red Lentil Burgers


Ingredients:


1 C red lentils


3 c water or vegetable stock


1 T olive oil


2 carrots


2 ribs celery


1 small yellow onion


1 C panko bread crumbs


1/2 c walnuts chopped


1/2 tsp salt


1/4 tsp red pepper flakes


1 tsp Trader Joes 21 seasoning salute (or whatever spices you like)


1/3 c fresh parsley


Directions: Preheat oven to 400 degrees. Bring water or stock to a boil in a large pot, add lentils, reduce heat and simmer 25 minutes until tender. Drain lentils and add to a large bowl, set aside. Heat oil in a large skillet, add onion, celery, and carrots, saute 10 minutes or until softened. Once soft remove from heat and add to lentils, mix together. Stir in TJs seasoning or whatever spices you choose. Add walnuts, bread crumbs, salt, red pepper flakes, and parsley. Stir together until well mixed. Using an ice cream scoop measure out mixture to form patties, place on a baking sheet, brush with olive oil and bake 10-15 minutes per side until browned.


Saute onions, carrots and celery in a large skillet coated with olive oil until tender, about ten minutes. If vegetables start to stick add 1 T of water and stir to help loosen them up.


21 seasoning salute is a combo of  onion, pepper, celery seed, cayenne, parsley, marjoram, basil, oregano, thyme, garlic, savory, rosemary, orange peel, lemon, cumin, coriander, and mustard. Feel free to use your own blend of spices to taste.


Stir in parsley, carrot mixture, bread crumbs, walnuts, and spices. Mix until combined.


Using an ice cream scoop to portion out form into patties, brush with olive oil and bake 10-15 minutes per side until browned.


Serve with  a dollop of my jalapeno cilantro hummus (recipe coming soon), on a bed of mixed greens


or alongside some roasted asparagus for a delicious and filling dinner. I can’t believe how much flavor I packed into such a tiny burger, Dutch even pointed that out which never happens. I’m reminiscing of these mouth watering little burgers as I sit here typing this, too bad Dutch took the leftovers with him to work :( It looks like I will be getting creative in the kitchen later today, we are running a little low on groceries and I refuse to go to the store until Monday, things could get interesting.

Ever had black eyed peas? Favorite recipe? I am currently boiling some black eyed peas but have never had them before so i’m not exactly sure of a good way to fix them.. suggestions?
