Salsa Roll-Ups
With the new year approaching, you may be looking for some ideas on tasty finger foods and appetizers you can serve. This is a great recipe I found at Kraft Foods (the photo is from Kraft, too). These Salsa Roll-Ups are really easy to make and everyone loves them! You can make the roll-ups a few hours ahead of time if you want and then cover and refrigerate them until you’re ready to serve. They’re great to make any time of the year, so be sure to try them out! SALSA ROLL-UPS (adapted from Kraft Foods) 4 oz. (1/2 of an 8-oz. pkg.) Cream Cheese or Neufchatel Cheese, softened 3 Tablespoons salsa (I like to use the mildly spicy salsa) 1/4 teaspoon chili powder 4 (6-inch) flour tortillas (I like to use the spinach, sun-dried tomato, or whole wheat flour tortillas) 1/2 cup finely shredded cheddar cheese or Mexican blend finely shredded cheese 1/8 cup finely chopped green onion stems (optional) In small bowl, mix softened Cream Cheese or Neufchatel Cheese and salsa together until well blended. Add chili powder and blend well. Spread mixture onto the 4 tortillas. Top evenly with shredded cheese and chopped green onion stems, if desired. Roll up tortillas tightly and cut each one into 5 slices. Arrange on a platter and serve. Makes 20 roll-ups.
