Mushrooms are finally starting to pop up and after three trips to my secret location it finally paid off with some wine caps. I have posted about these a lot and I have mentioned mushroomlandia a lot so there is little need for me to link them for you. The caps were so big that even with careful handling they did not survive even being picked. A couple of these caps were easily ten inches in diameter and as soon as I touched them they broke.



Not wanting to waste a thing of beauty I even used the stems. I peeled away the outer layer and diced them up with a little fresh thyme and sauteed them with olive oil.



I served them over some polenta cakes and kicked them up a little more with a drizzle of porcini oil.



I couldnt wait to taste my first 'fresh' wild mushrooms of the season and trust me waiting all winter long was worth every bite. I am going out again today to my other 'secret' location - we shall see.
