I find lunch can be terribly boring. I’m not a huge sambo fan as I don’t like soggy tomatoes or cheese between slices of flacid bread. Yeuch 
Soup is a favourite of mine but I get bored easily so the Vat of yummy Soup we’ve made on a Sunday can be wearing rather thin by Tuesday’s Lunch.
I do love to have something interesting and tasty for my bridge between brekkie & dinner. So if you have a pack of flour or corn Tortillas in the press, there’s no excuse for a boring lunch!

My favourite filling:
Grated Mozzerella Cheese
Chopped Red Chilli (or dash of Tobasco)
Chopped Red Onion
Torn Parma Ham
Salt & Black Pepper
1. Place tortilla on a pan – no fat required. Turn heat to medium. Sprinkle filling all over & place 2nd tortilla on top.
2. Press firmly with a spatula/fishslice and once heated through & tortillas are stuck together, flip & press firmly for another few minutes.
3. When tortillas are warmed through & cheese has melted cut like a pizza into 6. Serve with guacamole, salsa and/or sour cream or creme fräiche if your’re feeling especially hungry (as I always am).
