Stuffed Okra / Stuffed bhendi
A fry recipe which compliments some hot rice and any lentils.
Preparation time = 20 mins Serves = 4 Calories = Approx 160/ Serving INGREDIENTS- 1 lb Okra / Bhendi / Bendakaya 1 Onion (Sliced) 2 Tbsp Gram flour / Senagapindi / Besan 1 Tbsp Cumin Seeds 6-10 Dried red chillies 1 Tbsp Coriander seeds 1 Tbsp Chana dal 1 Tbsp Toor dal / Kandipappu 1 Tsp Red chilli powder 1 Tsp Tamarind pulp Salt to taste (around 2 tsp) 2 Tbsp oil PREPARATION- 1. Clean the okra and cut the ends. Split open the okra in the center leaving the ends intact. 2. In a pan, dry roast chana dal, toor dal, coriander seeds, cumin seeds, dried red chillies and gram flour. Now transfer these into a blender. Add tamarind pulp, red chilli powder, salt and blend into a fine powder. 3. Transfer the ground powder into a bowl, and make it into a paste by adding little water at a time. 4. Now stuff the okra with this paste and set aside. Save the remaining paste. Stuffed okra5. Heat 1 Tbsp oil in a pan. Add the stuffed okra and fry till they are done on a very low flame. Keep turning every now and then to cook them evenly on all sides. 6. Once the okra are cooked take them out of the pan and set aside. 7. Now to the same pan, add the remaining oil and heat. Add the sliced onion and fry till golden brown. Stir in the remaining paste we made and mix well. Cook till onions are done. 8.
