Summer Salmon Salad Recipe
![]() Sounds scrumptious, doesn't it? I love the simplicity and the freshness of this dish. I used as much organic produce I could get my hands on at the supermarket since I didn't get the chance to go to the Farmer's Market last weekend. I dislike the store's offerings so much and I always regret not taking the time to buy from our local farmers. I did purchase a beautiful Copper River Sockeye Salmon though. They're found in stores just a few weeks out of the year. It was kind of pricey, but so worth it. A French baguette would compliment this dish well. I served this with a side of quinoa this evening. Summer Salmon Salad
Ingredients: 4 wild salmon fillets (about 1 lb.)your favorite vinaigrettezest of one lemonmixed salad greens 8-10 grape tomatoes, halved 2 hard-boiled eggs, quarteredhandful of green beans, trimmed and halved2-3 small red potatoessalt and pepper Boil potatoes in salted water for 15 minutes or until tender. Add green beans and boil for 3 more minutes. Drain and rinse under cool running water. Meanwhile, salt and pepper salmon and pan fry in a little oil-about 3 mins. on each side. In a small bowl, combine vinaigrette and lemon zest. Cut potatoes into quarters and toss potatoes in a small bowl with a little bit of the vinaigrette mixture. On a large platter arrange the salad greens, tomatoes, eggs, green beans, and potatoes. Lay the salmon above the arrangement. Drizzle the vinaigrette over the whole platter. related searches : Summer
