Super easy supper
Last night was a night for the super easy supper fairy to visit, but it had to be homemade since we are watching our pennies. So I thawed out a pound of mild Italian sausage links and cooked those in small chunks. Next I boiled some angel hair pasta to al dente. I chopped two big tomatoes and 1/2 pound of fresh mozzarella cheese and tossed it with about 1/4 cup of olive oil. I added in some dried basil since I didn’t have fresh on hand. Salt and pepper to taste and when the spaghetti was done, I drained it, minus a cup of cooking water, and added it to the tomatoes and cheese. I mixed it all up and added a bit of cooking water as it seemed a bit dry. Boy was it good and tasty! I needed simple since we are still on baby watch with the twins. My daughter is amazingly strong and able to carry these boys to full-term! Most twins come much earlier but she is doing great and these boys are going to be healthy. I have stocked the freezer with the foods we have stopped buying but since I could go any day to my daughter’s to help with the birth, the guys need to be able to eat something while I am gone.
