Preparation
Bring a large quantity of water to a boil and cook the desalted cod for about 10 minutes.
Drain and remove any bones. Flake the cod and set aside.
Beat the eggs into an omelette. Season with salt and pepper, then add parsley to taste. Mix well and set aside.
In a frying pan, heat a good drizzle of olive oil and sauté the sliced onions, peeled and chopped garlic, and bay leaf. Cook until translucent. Remove the bay leaf.
Add the flaked cod and sauté for about 3 minutes. Then add the straw potatoes and mix gently.
Pour the beaten eggs into the skillet and stir together. Add black olives (to taste). Be careful not to overcook the eggs, as this will dry out the mixture.
And voilà, it's ready! Serve in a soup plate and garnish with black olives and chopped parsley.
Observations
How to make homemade straw potatoes (matchstick potatoes)?
➤ In frying oil:
Cut potatoes into very thin matchsticks and immerse in water for 30 minutes to remove excess starch. Drain and dry well with paper towels. Fry in hot oil.
► Oven-baked:
Cut potatoes in the same way as for frying: into matchsticks. Immerse cut potatoes in water for 30 minutes to remove excess starch, then drain well and dry with kitchen paper. Toss potatoes with olive oil and transfer to a baking tray lined with baking parchment. Bake in a preheated oven at 430°F/220°C for 20 minutes. Turn halfway through cooking to ensure even cooking.
