Tasty and healthy butternut squash casserole
Butternut squash. This big and clonky orange vegetable is something I did NOT grow up with. I didn't eat butternut squash until I was in my 20s. For a while I did not even like this winter squash, and then one day I tried a butternut squash casserole at a get-together and voila! I was in love. I have tried a few recipes but this one is easy, tasty and healthy! Don't ask me where I got it from because I have tweaked it so much I don't even remember the original recipe. Ingredients: 1 butternut squash3 cloves of minced garlic1 yellow onion (you can use any other onion but I think the sweet caramelized taste of the yellow onions works well with the squash)2 tbsp olive oil1 cup panko whole-wheat crumbs (you can find these in the Asian products isle)1 tsp salt1 tsp pepper1 cup grated parmesan cheeseDirections: 1. Preheat your oven to 360 degrees F. While waiting, cut the squash in half and place in a baking pan, with the skin side up and bake for 70 minutes. 2. Let the squash cool off and then scoop the insides and put in a casserole dish. 3. In a saute pan, put the olive oil, onions and garlic and saute until the onions are brown. Warning: the aromas coming out of your kitchen will be amazing! Once cooked, mix the onion mixture with the squash. Add the panko crumbs, salt and pepper, and mix well. 4. Sprinkle the yummy cheese over the squash mixture, cover with foil and bake for 25 minutes. 5. Remove the foil after 10 minutes and continue cooking. After it is done, serve and enjoy! The result is this beauty: The flavors are so simple yet amazingly delicious. Health-wise, you can't beat this dish. The onions and garlic are great to strenghten your immune system. The butternut squash is low in fat and high in fiber. It also provides potassium, vitamin B6, beta-carotene and vitamin C. So in other words: a powerhouse of nutrients. So, give it a try.
