Marinated roasted red peppers

2 large red bell peppers

¼ cup olive oil

3 tbsp balsamic vinegar small handful of fresh basil, minced

salt and pepper to taste


  • Preheat oven to 400 degrees. Place bell peppers on a cookie sheet and roast for about 10-15 minutes .
  • Remove from the oven, place in a bowl and cover tightly with plastic wrap.
  • Let the peppers sit until cool enough to handle .
  • Rub the skins off, discard the seeds and veins, and slice into thin strips.
  • Place bell peppers in a bowl with remaining ingredients, stir, cover, and refrigerate until ready to serve.
