The Hangover Breakfast
Well I wasn't exactly hungover, but I sure felt like it, getting home at about 4am. This was my first night out in a very long time. A friend of mine was leaving for America yesterday, so we decided to go to a local bar for pre-drinks then hit town afterwards, the night before.
I started partying at a very young age and by the time I was legal (I was younger than most my friends by a year), I felt like I had to catch up with all the clubbing my friends were doing the year before. So there was a period in my life when I was 18-20 years old that me and my friends would go out clubbing/getting drunk consecutive nights in a row (wednesday, thursday, friday) every week (rain/shine, summer/winter) and somehow making it to uni classes the next day. I wasn't as bad as most of my friends though! A lot of times I would give some nights a miss. You can imagine that by the time I hit 20, I was sort of over it. University life was getting harder, having to juggle studying for two degrees and working part time. And I was already with my bf for about a year by then. I guess you could say I was getting old and I couldn't be bothered. All I wanted to do was go out for dinners, "chill out" with friends or stay at home. So these days I would only ever go out for friend's parties/birthdays and try to avoid clubbing at any cost. But in saying all of that, Friday night was fun. Clubbing once in awhile is fun. It was the first time I had been out with my high school friends in a very long time. Although I was very sober (I got over the drinking too), my friends always know how to have a good time. It was crazy! I went home at about 4am, while my friends stayed. Saturday morning, after only 4 hours sleep (I can never sleep in), I was in need of a very filling breakfast. So part of my meal included this toasted sandwich inspired by Giada De Laurentis' toasted panini recipe. I didn't have the majority of the ingredients she used but I made do with alternatives I found in my fridge. Ingredients Slices of buttermilk loaf (I made this the night before, very similar to sourdough) Cherry & strawberry Jam Fresh rosemary, chopped Cream cheese (I didn't have fresh mozarella) Olive oil Brown sugar I know, I know I'm not suppose to eat half of this stuff but I didn't care at the time. Sprinkle some olive oil on one side of each slice of bread. Spread some jam on one slice, top with cream cheese and rosemary. Place the other slice of bread on top and lastly sprinkle a hefty amount of brown sugar on top. Toast the bread on a sandwich grill for 2-3 minutes.
