Pour the cream into a high-sided bowl. Add mascarpone, powdered sugar and vanilla extract.
Beat with an electric mixer until stiff and creamy.
→Place the cream, mascarpone, bowl and beaters in the freezer 15 minutes beforehand to make the recipe a success every time!
Soak the ladyfingers in the coffee.
→If you want a melt-in-the-mouth texture, dip them all the way in, if you want a chewy texture, dip them only halfway in.
Place soaked ladyfingers side by side on cling film, making 3 rows of 10 ladyfingers, sugar side up.
→The cling film should stick out well on all sides.
Transfer the cream to a piping bag and poach the cream onto the central ladyfingers.
→You can also poach the cream directly onto all the ladyfingers (see step 8).
Sprinkle with sifted unsweetened cocoa powder!
Add coffee-soaked (entirely) ladyfingers on top (you'll need 10).
Top with cream, unsweetened cocoa powder, and soaked ladyfingers cut in half.
Poach cream over all the ladyfingers (center and sides) and sprinkle with sifted unsweetened cocoa powder.
Fold the log over, folding the side ladyfingers towards the center. Press well to form the "cabin" and wrap tightly with cling film.
Place on serving platter and refrigerate for at least 6 hours.
Carefully remove the cling film. Sprinkle unsweetened cocoa powder sifted over the entire surface. Sprinkle sifted powdered sugar over the top.
Finally, place coffee beans on top for decoration.
The log is easy to cut, a ladyfinger: one slice! Enjoy and happy Holidays! :-D
FAQ ❓
How do you achieve the perfect texture of the cream for the moldless tiramisu log?
To obtain a firm cream, place the cream, mascarpone, bowl and beaters in the freezer for 15 minutes before beating the mixture with an electric mixer.
What's the best way to soak the ladyfingers for a soft or melt-in-the-mouth log?
For a melt-in-the-mouth texture, dip the ladyfingers entirely into the coffee, while for a soft texture, simply soak them halfway.
Why use cling film to assemble the log without a mold?
The cling film helps to hold the ladyfingers in place during assembly, and makes it easier to shape the "cabin" by folding the sides, while ensuring good refrigeration.
How do I decorate the log for an attractive, gourmet finish?
After removing the cling film, sprinkle the surface with sifted unsweetened cocoa powder, then sifted powdered sugar, and add coffee beans for an original decorative touch. To change the recipe and accentuate the "snow" decoration, you can also add shredded coconut.
How long should I leave the log in the fridge before eating it?
We recommend letting the log rest in the fridge for at least 6 hours, to allow the flavors to blend and the texture to be optimal. Handy for making ahead!
How to make this cake log gluten free?
You can prepare your own gluten free ladyfingers by following our recipe just here!
Can I use decaffeinated coffee for this recipe?
Yes, of course! It's best to use decaffeinated coffee if you're eating the log at the end of dinner!
