Separate the egg whites from the yolks. Whisk the whites, gradually adding the sugar.
Whip the whites until stiff peaks form, resembling a bird's beak.
Add the yolks and quickly whisk until fully incorporated. Avoid overmixing.
Sift the cornstarch over the mixture, then gently fold it in using a spatula. Carefully lift the batter over the cornstarch.
Pipe the ladyfingers onto a baking tray.
Dust the ladyfingers with icing sugar. Wait 2 minutes, then dust again.
Bake for 11 minutes at 375°F (190°C).
And there you have it, your gluten-free ladyfingers are ready!
Observations
Shape: You decide! For a Charlotte, you can choose to make round biscuits to place at the bottom.
Sift the cornstarch: This step is essential in this recipe. Otherwise, there will be too many lumps!
No piping bag? Cut the corner of a freezer bag and pour your mixture in! For even more precision, you can insert a nozzle ;-)
