Tofu With Salted Fish Topping
On the days I have to prepare a meal for myself when my hubby is away, its always something simple. This tofu dish is enough for me to go with white rice. If salted fish is not your preference, it can be replaced with dried shrimps or dried anchovies. For those of you who are vegetarians, the salted fish can be totally omitted and just use all the other ingredients as stated in this recipe. Ingredients: 1 packet of soft tofu (abt 50g) 20g salted fish (soaked in water and cut into tiny pieces) 3 shallots (chopped) 1/2 inch ginger (chopped) 3 cloves garlic (chopped) 1 stalk of spring onion (cut into smaller pieces) 2 tbsp olive oil 1tsp dark soy sauce 1/2 tsp sesame oil salt to taste Method: Microwave the tofu for 3 mins and keep aside. When oil is heated, fry the onion, garlic, ginger and salt fish until golden brown and crispy. Add in the soy sauce, sesame oil and a pinch of salt to taste. Pour on top of the tofu and garnish with the spring onions.Serve With Dipping Sauce: 1 red chilly (deseeded and chopped) 2 birds eye chillies (chopped - optional) 1 clove garlic (chopped) 2tbsp lemon juice 1 tbsp light soy sauce salt and sugar to taste Mix all together. related searches : Tofu
