Tuesdays With Dorie ? Cornmeal Shortbread Cookies
Shortbread cookies are such a wonderful deviation from the norm. And never what’s expected when you tell someone you’re baking cookies. It’s a simple recipe involving flour, cornmeal, sugar, lemon zest, vanilla and a glorious amount of butter. It comes together pretty easy, too… resulting in a smooth, rich and sinful little treat to go along with a hot cup of tea.
Though, no matter how long I chill the dough, I always have a hard time with the cookies spreading out in the oven. However, I only had a few casualties this time… and those became the testers.
