Velvety Hot Coconut-Chocolate Milk (dairy-free)

You can really sink your teeth  into this one!

When we kids came inside after playing in the snow all day, my mother was always there to whip us up a pot of homemade hot chocolate.


 But of course, back then, my food intolerance's were unknown, and we all got straight milk- from a cow!

(kind of ridiculous, if you think about it- drinking the milk from another animals mother! And the calcium and Vitamin D won't even stick!  According to recent studies, women were followed who drank 2 or more servings of cows milk daily, and they did not receive any benefits, in that they developed osteoporosis at the same rate as those women who drank less to no milk!  The reason for this, it is believed, is that through pasteurization, the vitamins naturally found in animal milk are destroyed, and the manufacturers then add artificial vitamins back to the milk- which serves no benefit to humans!  So, if you were worried about yourself or your child's intake of vitamins through milk intake, worry no more!  You can get the same benefits- or lack thereof- by substituting enriched soy, rice, almond or coconut milk to your family diet.)

After a brisk walk outside, I still enjoy coming indoors and making up a pot of hot chocolate -



Only now I use alternative 'milk' sources.  And there are plenty.  This one uses coconut milk.


Not to be confused with coconut water, or Cream of coconut.

Ingredients:

1 13.5 ounce can of coconut milk
2 heaping tablespoons of cocoa powder
3 tablespoons dairy-free chocolate chips
1-2 tablespoons of Agave Nectar, or
 1-2 packets Truvia stevia natural sweetener
mini-marshmallows
nutmeg, freshly grated

METHOD:

In a small saucepan, pour in coconut milk.

Add the cocoa powder, DF chocolate chips, and sweetener of choice (you may also use honey, or corn syrup in a pinch, though it adds more calories).

   Over medium-low heat, slowly whisk ingredients together until well blended. Do not boil.


When heated through and blended, pour into 2 mugs.  Top with mini-marshmallows, and allow to steep for 2 minutes- they will melt and thicken hot coconut-chocolate milk.  Top with a few more mini-marshmallows, and grate nutmeg over the tops.  Serve!


 You can also serve this luxurious chocolate drink in shot glasses, as a welcoming offering to guests entering from the cold, at your next social gathering.  If it is a social mixer, you may even consider topping the drinks with a floater of Godiva's Chocolate Liqueur for a sweet and happy surprise!
