WCC Day 22: Portugal
During our trip to Portugal, we were pleasantly delighted with the cuisine: Mediterranean and Moorish influences blend together to create a cuisine that is easy to prepare, incorporates fresh ingredients, and can feed large amounts of people. Portuguese cuisine is more than just chicken and piri piri sauce: it is salads, soups, stews, grilled poultry and meat, fresh seafood, creamy deserts, and the land of Port wine. Some famous Portuguese dishes and food include: Pasteis de nata: tiny caramelized custard tarts Charcoal roasted chicken and piri piri sauce: piri piri sauce is brushed on the chicken and this is usually served with spicy rice Caldo verde: a soup of potato, kale, and chourico Chourico: dry cured sausage, sometimes served flaming Salted cod: cod salted and dried to preserve it Commonly used spices are: cinnamon, cloves, nutmeg, chili powder, paprika, saffron, and red chillies.
