Whole Wheat Banana Bread

Banana bread from a box, tends to have a lot of sugar, so I prefer to make it from scratch.
It is a great way to use bananas, that are super ripe 
and almost past their prime.
Here is my favorite recipe for it.
It is super delicious
& did I mention there is no sugar in this recipe.
You gotta love that.


To make it you will need:
1cup warm water
1 package dry yeast (21/4 tsp.)
1 cup mashed ripe banana (about 2 bananas) 
2 1/4 cups bread flour, divided
1/2 cup soy flour
1 cup whole wheat flour 
1 1/4 tsp. salt
cooking spray
1tsp. melted butter


In a large bowl combine 1cup of warm water 
and yeast; let stand 5 minutes .
Then stir in the banana.
Add 2 cups of the bread flour, 1/2 cup soy flour, 1 cup whole wheat flour, and salt to the yeast mixture; stir until a soft dough forms.
Turn out the dough onto a floured surface and knead until smooth and elastic, it will take about 8 minutes. 
You can use the remaining 1/4 cup of flour as needed to  keep the dough from sticking to your hands.
Place the dough in a large bowl sprayed with cooking spray. 
Turn the dough to coat the top with spray and let rise in a warm place covered, for 45 minutes, or until doubled in size.
Press two fingers into the dough. If  the indention remains, the dough it ready. Punch the dough down and cover and let rest for 5 more minutes.
Roll dough out into a 14x7-inch rectangle on a floured surface. 
Then roll the dough up tightly starting from the short end, pressing firmly to eliminate air pockets.  
Pinch the seams, and place the rolled dough seam down into a 9x5 inch loaf pan,coated with cooking spray. 
Spray the top with cooking spray and cover with plastic wrap. Let rise in a warm place for an additional 30 minutes or until doubled in size.  Again, press two fingers into dough, if the indention remains it is ready.
Bake in a 400 degree oven for 1 hour, or until slightly brown.
The bread will sound hollow when tapped.
Remove from pan and brush with butter.
Let cool completely.
