Banana Date Walnut Bread

  • Preheat oven to 350 F. Lightly coat a 9×5-inch loaf pan with canola oil cooking spray.
  • In a medium bowl, combine the 3 mashed bananas with the applesauce and date sugar. Stir until well-mixed. Gently fold in the chopped banana and chopped dates.
  • In a separate medium bowl, mix both types of flour, baking powder, baking soda, and salt.
  • Combine the dry and wet ingredients in one bowl, stir until the dry ingredients are just moistened. Gently fold in the walnut pieces.
  • Spread the thick batter into the the prepared loaf pan and bake at 350 F for 40-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  • Cool in the pan for 10 minutes, turn out onto a cooling rack and cool completely before cutting into 10-12 slices.
