6 ways to preserve figs and enjoy them year-round

The fig is a fleeting fruit, as ephemeral in season as it is irresistible at the table. Its tender and mellow pulp barely lasts a few days fresh, but there are simple and safe tricks to prolong its enjoyment beyond the summer. The key is to choose ripe but firm figs in good condition, and apply preservation techniques that respect both flavor and food safety.

Here are six effective ways to preserve them and enjoy them all year round.


1. Fig jam

The most classic option. Simply boil the figs with sugar and a little lemon juice until it thickens. Stored in sterilized jars and well vacuum-sealed, the jam can be kept for months in the pantry. Once the jar is opened, it should be kept cold and consumed within a few weeks.

2. Drying or dehydration

Drying concentrates flavor and reduces moisture, which slows the development of microorganisms. They can be dried in the sun (in dry and ventilated climates), in a low temperature oven or in a dehydrator. It is essential that they are well dried before storing them in airtight containers, away from humidity.

3. Freezing

Freezing figs is fast and efficient. Ideally, first place them spread out on a tray and, once firm, transfer them to freezer bags. In this way they do not clump together. After thawing, they lose some firmness, but they are still perfect for pastries, smoothies or sauces.

4. Preserves in syrup

By cooking them gently in a light syrup and packing them in sterilized jars, an elegant and long-lasting dessert is obtained. It is essential to ensure that the jars seal tightly under vacuum and store them in a cool, dry and dark place.

5. Chutney or salted compote

With vinegar, sugar and spices, figs are transformed into a chutney ideal for cheeses, meats or foie gras. The acidity of the vinegar acts as a natural preservative. In sterilized and well-sealed jars, it will keep for months without problems.

6. In liquor or brandy

Steeped in brandy or rum, sometimes with spices or a little sugar, figs keep for months and become a perfect accompaniment to winter desserts or ice cream.

Essential safety recommendations

  • Always choose fresh, whole figs with no signs of mold or damage.
  • Sterilize glass containers by immersion in boiling water for at least 15 minutes or by other official methods (dishwasher on high temperature cycle, chemical sterilization, etc.), and be sure to fill the jars with the hot product.
  • Check that the jars seal tightly under vacuum: the lid should be tightly sealed, with no leaks or bulges.
  • Ensure adequate acidity in low-acid preparations (e.g. light syrup) to avoid risks with bacteria such as Clostridium botulinum.
  • Store in cool, dry and dark places, away from heat and direct light.
  • Once opened, store in the refrigerator and consume soon.
  • In case of any strange odor, bubbling, cloudy liquid, unusual color or altered appearance, it is safest to discard the product.
