Grated celeriac: This simple step prevents it from turning brown too quickly
A good homemade celery remoulade, with a nice and creamy sauce and just the right amount of mustard… Now that’s a simple appetizer we love to have on the table!

But you may have already noticed a little problem: as soon as it’s grated, the celery root starts to brown. It loses some of its lovely light color before you’ve even finished making the sauce.

Should you hurry up, switch graters, or use a special ingredient? Here at Ptitchef, we have a few super-easy tips to share. And here’s the good news: you probably already have everything you need in your kitchen ;-)

Why does celery change color?

Once peeled and cut, celeriac comes into contact with the air. Natural reactions—particularly enzymatic ones—can then cause its flesh to brown.

This phenomenon also occurs with apples, pears, and certain mushrooms. It doesn’t necessarily mean the celery is spoiled. However, a gray color isn’t very appetizing in a salad!

The finer you grate the vegetable, the more surface area is exposed to the air. That’s why the strands can change color fairly quickly.

The best approach? Plan your prep so the celery doesn’t sit alone for too long in an empty salad bowl.

Lemon: The Simplest Trick

Do you have a lemon on hand? Perfect! Its juice is slightly acidic and can slow down the browning of celery.

Pour a little lemon juice into your salad bowl before you start, then toss the celery strands as you grate them. The idea is to distribute the acidity quickly, without turning the salad into lemon juice.

Start with a small amount, taste it, and adjust as needed. You can then add your usual rémoulade dressing.

Do you prefer vinegar? It can also help prevent discoloration, while adding a slightly different flavor. Choose the one that best suits your recipe.

First, prepare the sauce, then grate the celery

This is our second tip, and it doesn't require any extra ingredients!

Instead of starting by grating the whole vegetable, prepare your dressing in the salad bowl. Mustard, mayonnaise, or yogurt—whatever you prefer—a squeeze of lemon, some pepper… Mix it all together.

Then grate the celery directly into the salad bowl and stir regularly. This way, the strands will be coated almost immediately.

You’ll avoid leaving them exposed to the air for too long and distribute the dressing more evenly. Handy, isn’t it?

Of course, this step slows down browning—it doesn’t guarantee that your salad will retain exactly the same color for several days.

What kind of grater should I use for celery rémoulade?

For a salad that’s pleasant to eat, choose a grater that produces even strands. A grater with large holes or a food processor equipped with a suitable disc will give you a nice texture.

Pieces that are too thick can be quite tough, especially if the celery is very firm. Conversely, an extremely fine texture can quickly become dense when mixed with the dressing.

Before grating, carefully peel the root and remove any earthy parts. Use a stable cutting board and watch your fingers, especially as the piece gets smaller.

Our little tip? Cut the celery into manageable quarters. You’ll save time without taking any unnecessary risks.

What if the celery has already browned a little?

If your celery has just been grated and has darkened slightly, this isn't necessarily a food safety issue. Add the sauce and check that it still has a normal smell and texture.

However, celery that is slimy, moldy, poorly stored, or has an unusual odor should not be salvaged with lemon.

Lemon juice is never a substitute for the freshness of the ingredient, nor does it allow a salad to be stored indefinitely.

When buying celeriac, choose a firm root with no suspicious soft spots. And if you’re only preparing a small appetizer, there’s no need to grate the whole root at once.

Can you prepare celery rémoulade ahead of time?

Yes, but you have to store it properly! A shredded celery salad with a mayonnaise- or dairy-based dressing should be kept in the refrigerator in a clean, sealed container and eaten quickly.

Avoid leaving the salad bowl on the table all evening. And if you’re using homemade mayonnaise made with raw eggs, pay special attention to the storage recommendations.

For a festive meal, you can prepare the dressing ingredients in advance, then shred the celery just before serving to preserve its vibrant color.

In the end, the secret is nothing complicated: a little lemon juice, a ready-made dressing, and a quick toss. That’s all it takes to enjoy a bright, delicious celery remoulade!

And you—do you prefer it with lots of mustard or a milder dressing? Tell us everything ;-)
