Canned Corned Beef

Corned beef has always been my favorite breakfast dish. Together with hot pandesal or rice, and a cup of coffee would be perfect to start my day right. Here?s how I prepare this dish:

Ingredients:

2 340g cans of Libby?s corned beef



1 medium size onion cut in round

1 medium size potato

1 tbsp vegetable oil

Pepper and salt



How to cook:


Heat the oil in a preheated pan.
Fried the potatoes until golden brown and set aside.
In the same pan, remove some of the oil for stir frying.
Add the onions.
Add the corned beef after 2 minutes. Cook for 5 minutes or until the corned beef is crusty. Don?t forget to add salt and pepper to taste.
Serve the cooked corned beef and add the potatoes on top.
