Chouquettes are delightful choux pastries topped with sugar pearls. They are the same dough used for profiteroles but served unfilled, making them a perfect light snack to enjoy with your afternoon coffee or tea.

In a saucepan, heat the water with the butter and salt. When the butter has melted, add the flour all at once. Mix until the dough pulls away from the sides.
Remove from heat and add the eggs one at a time, mixing well after each addition. Stir vigorously to achieve elasticity in the dough.
Using a piping bag, form the choux to your desired size (preferably medium-small). Beat an egg and brush the choux with it.
Sprinkle with sugar pearls.
Bake for 20 minutes at 350°F (180°C). Be careful at the end of baking; do not remove them from the oven immediately to avoid deflating. Leave the oven door slightly ajar for 10 minutes before taking them out.
Let cool completely, and there you have it! Chouquettes are ready to enjoy!
Observations
* You can enjoy them plain or fill them with your favorite fillings (chocolate cream, vanilla ice cream, whipped cream, raspberry sorbet, peanut butter...)
* You can freeze the dough before baking. Just take it out 1 hour before baking and let it thaw in the refrigerator.
