Strawberry basil pound cake

1 cup sugar

5 tbsp butter, melted

1 cup gluten-free all-purpose flour

generous 1/4 tsp baking powder

pinch salt

generous 1/3 cup strawberry puree

2 fresh basil leaves


  • Preheat oven to 325° F and spray your loaf pans with cooking spray.
  • Combine the flour, baking powder, and salt in a bowl and set aside.
  • Stir the butter and sugar until well mixed. Add the eggs, one at a time, mixing well between each addition.
  • Add the flour mixture slowly, mixing well until it is cohesive.
  • Add the strawberry puree and basil and mix until well combined.
  • Pour into pans. Bake for 30-35 minutes, or until a toothpick comes out clean.
