In a bowl, crush the banana with a fork.
Add the sugar, oil, almond milk, and mix well.Add the soy yoghurts and baking powder and mix.
Gradually add the flour and mix.
For fluffy pancakes, let the batter rest in the fridge for about 20 minutes (optional).Heat a pan over low heat. Once ready, pour a small ladle of batter, spread it slightly, and let it cook for about 1 minute.
►Tip: your pancake will be ready to flip when bubbles form on its surface.
Cook the other side for a little less than 1 minute.Repeat the process until there is no batter left.
Stack the pancakes on top of each other to form a beautiful tower, and it's ready!
You just need to top them according to your desires: maple syrup, chocolate sauce, fresh fruits...
Observations
Banana: it can be replaced with 120g of applesauce
Almond milk: feel free to vary the pleasures by using drinks of other flavors (rice, soy, coconut...)
