- Combine the egg with half of the sugar and add the corn starch. Mix well.
- Bring the milk to boil with the other half of the sugar and the vanilla. When it boils, pour the milk in the egg + sugar + corn starch bowl. Mix well and pour it all in the pan.
- Return to the heat and whisk until the mix boils. When it boils, whisk for 2 minutes and remove from heat.
- Add the butter gradually and whisk. Cover with plastic foil. Refrigerate. It has to cool down completely.
- Unroll the first puff pasty sheet. Spread the custard on half of the pastry sheet and fold it.
- Cut the borders, then cut rectangles. Repeat with the other puff pastry sheet.
- Twist the doughs and put them on a baing tray with parchment paper. Baste some milk and sprinkle with pearl sugar.
- Bake for 25 minutes at 350°F (180°C).
- There you are, your flaky vanilla twists are ready !
