Preparation

  • Step 1 - Flaky vanilla twists
    Combine the egg with half of the sugar and add the corn starch. Mix well.
  • Step 2 - Flaky vanilla twists
    Bring the milk to boil with the other half of the sugar and the vanilla. When it boils, pour the milk in the egg + sugar + corn starch bowl. Mix well and pour it all in the pan.
  • Step 3 - Flaky vanilla twists
    Return to the heat and whisk until the mix boils. When it boils, whisk for 2 minutes and remove from heat.
  • Step 4 - Flaky vanilla twists
    Add the butter gradually and whisk. Cover with plastic foil. Refrigerate. It has to cool down completely.
  • Step 5 - Flaky vanilla twists
    Unroll the first puff pasty sheet. Spread the custard on half of the pastry sheet and fold it.
  • Step 6 - Flaky vanilla twists
    Cut the borders, then cut rectangles. Repeat with the other puff pastry sheet.
  • Step 7 - Flaky vanilla twists
    Twist the doughs and put them on a baing tray with parchment paper. Baste some milk and sprinkle with pearl sugar.
  • Step 8 - Flaky vanilla twists
    Bake for 25 minutes at 350°F (180°C).
  • Step 9 - Flaky vanilla twists
    There you are, your flaky vanilla twists are ready !

Observations:

You can freeze these twists before or after baking.
