Kinilaw Na Talaba (Ceviche Oysters)

1 kilo fresh talaba/ oysters
1/2 cup vinegar
1 teaspoon salt
ground pepper
1 bulb onion, chopped
1 medium sized ginger, grated
green unriped mango, grated
red hot chili pepper, chopped


1. Scrape the meat out from the shell of the talaba, wash the meat with water and set aside. It would also be best to soak the the talaba meat into water to keep it fresh.

2. Chop onion, red hot chili pepper, grate ginger, unriped mango and place it a mixing bowl. Add the salt, black pepper and the talaba meat into the mixing bowl mix the ingredients well.

3. Add the vinegar. The vinegar is the cooking ingredient of the dish.
