Very Easy

Number of serving: 4
Cooked rice : enough for 2 people

Potatoes : 2 medium sized

Onion : 1 large sized

Jeera/cumin seeds : 2 tsp

Green chillies : 1 - 2 chopped

Salt: to taste

Chilli powder : as per taste

Turmeric powder: 1/4 tsp

Coriander : few sprigs finely chopped

  • Heat about 2-3 tbsp of oil in a kadhai or a non-stick pan.
  • When the oil gets sufficiently warm, add the cumin seeds. The cumin seeds should splutter.
  • Now add the chopped potatoes and let them cook for a minute or two.
  • Add the onion and green chillies and fry. A tip here is to not cover the pan while cooking the mixture since we dont want the potatoes to be soft. We want them to fry well.
  • Once the potatoes have changed colour and you feel that they have cooked through, add turmeric powder, chilli powder and salt and mix well. Check seasoning.
  • Now add the cooked rice to this mixture and mix well. You can sprinkle little water to ensure that all ingredients mix well and the rice gets coated well with all the ingredients.
  • Cover and cook for 2-3 minutes. Add the chopped coriander mix well and serve.
