- In a bowl combine all the spices together. Rub the roast with oil and then rub in the spices.
- Make sure you cover the entire roast well. If you have time let it rest for 30 minutes.
- Heat oven to 350F and bake the roast for 20 minutes per pound.
- After it's done turn the oven off . Remove the roast and let it rest for 30 minutes.
- The roast should be done to medium.
- When you are ready to serve slice into thinner slices and serve with mashed potatoes and gravy.
