1 large bitter gourd ( seeds and rind removed )

300 g fresh pork spare ribs

100 g dried oysters ( mine are Korean oysters )

4 garlics ( skin removed and used in whole )

800 ml water


  • Scald pork ribs with hot boiling water to remove smell and scum , set aside.
  • Rinse dried oysters briefly , wash and remove seeds and rind from bitter gourd , cut into bite size pieces.
  • In a pot , add in pork ribs , oysters , garlic , bitter gourd and lastly water.
  • Bring to a boil , remove any scum on the surface. Cover and boil for about an hour or slightly more on medium heat .
  • Season with a little salt and serve hot with steamed rice.
