  • Boil the corn pieces with water. Cook until its soft, remove and let it cool down.
    Once done, sliced out the flesh using a knife and keep aside.
    Heat butter and when heated, saute the shallots for couple of Min's.
    Add in the spices, green chillies and tomato.
    Continue to stir and mix for about 5 Min's or so.
    Pour in the corn stock, add tofu, salt and pepper to taste.
    Once the soup starts to boil, off the heat and add in the corn, spring onions and coriander leaves.
    Stir to combine a couple of times and its ready to be served.
