Ingredients

Number of serving: 2
Golden Pomfret - 500g to 600 g (debone and fillet it, set the head and bone aside)

Ginger - 3 slices (shredded)

Dried Flat Fish - 2 pieces (Fry till crispy and ground 2 teaspoons , balance set aside)

Stock - 900ml

Tomato - 1/2 no (Optional) (cut into wedges)

Wine - 1 tablespoon


For garnish:

Fried Shallot oil

Spring onion - 2 stalks

Pepper

Preparation

  • Bring stock to boil. Add 2 teaspoons of fried ground flat fish.
  • Add fish head and bone, follow by fillet slices bring to boil for approx 2 minutes or till cooked.
  • Add in ginger, tomato, balance fried flat fish pieces and wine, mix well.
  • Transfer to serving dish.
  • Garnish with spring onion, pepper and fried shallots oil.
