- Boil water with 1 tbsp of oil,and 1 tsp of salt,When water is boiling drop the noodles in boilling water and cook it as per instructions in pack.Usually between 4 to 9 min.
- Drain the water and run some cold water through the noodles so that they don't stick.
- In a wide pan,heat oil,add chillis ginger/garlic paste and fry of 30 sec.
- Add onions and fry for about 2 min,and vegetables and salt,keep it till they are 3/4 cooked.
- Now add spring onion and give a good stir.
- Immediately add noddles,ketchup and veniger,soya sauce,chilli sauce, black pepper powder and salt mix well till the noodles get the heat and ensure you keep mixing it.
- Move the veggies into one side of the pan and in the empty side pour 2 eggs and scramble it.
- Add a little salt and pepper powder and once the egg is done ,mix the veggies and then noddles and all sauces. Mix well.
