- In a skillet, brown pork cubes and set aside. But do not completely cook them yet. Fry them till sides of pork cubes turned light brown. Then set aside.
- In a large sauce pan, heat oil. Sauté garlic and onions. Cook until aromatic and onions turned transparent.
- Then, add tomatoes. Cook for 3 minutes, stirring constantly. Add the pork cubes. Stir until all ingredients are well-blended.
- Add tomato sauce, bay leave and 2 cups water. Bring to slow boil, cook until meat is tender, covered, stirring once in a while. Cook until meat is tender.
- Add carrots and potatoes. Season with salt and brown sugar. Add water until desired consistency is achieved.
- When carrots and potatoes are cooked, then serve your PORK AFRITADA with steaming hot rice.
