- Wash the shells/heads thoroughly. When oil is heated, fry the shell/heads until crispy and pink in colour. Add in 1 litre of water and maggi cube. Let it simmer until boiling point.
- Drain out the shells/heads and pour back into the pot. Fry the grounded chillies in 2 tbsp olive oil with a pinch of salt for 3-4 mins.
- Add 1/2 of this chilly into the broth and mix.
- Blanch the amount of mee as needed in hot water for 3 mins and another 2 mins in cold water and put in a serving bowl.
- Blanch the prawns in the broth as well as do the same for the kangkung 2-3 mins will do.
- Add the prawns, kangkung, sliced fish cakes, boiled eggs into the bowl of mee and pour the broth over.
- Serve with the balance of fried chillies with kalamansi lime.
