Pre-heat oven to 400 degrees Put bacon in a skillet or microwave and cook through but not crisp. Snip into pieces & set aside Drizzle olive oil in a baking dish. Place scallops in baking dish Season scallops with garlic, salt & parsley Toss to coat with oil Top with cooked bacon Sprinkle with breadcrumbs Sprinkle with lemon juice Top with mozzarella Scatter fresh basil on top, optional Drizzle with olive oil Bake in oven for 25 minutes.
