Preparation
Put the water and lentils in the pot and bring to a boil. Leave on medium heat for 15 minutes.
Add the peeled and diced potato and tomato. Also add the minced peppers and onion, along with the whole peeled garlic cloves.
Peel the carrot and slice it into thin rounds. Add it to the mixture along with the bacon. Mix well.
Place the chorizo slices on a paper towel and microwave for 1 minute to remove excess grease.
Add the chorizo to the mixture, along with salt, paprika, and olive oil. Stir well, cover, and let simmer for 25 minutes on low heat (or until the potatoes are cooked).
And there you have it, your Spanish lentil soup is ready!

Couldn't one just eliminate the food coloring and add tomato paste instead ? Is adding the food colouring just for colour?
