  • Wash and prepare seafood. Cut fish fillets into smaller pieces.
  • Scrub and clean the mussels. Take legs off crab and crack shells, so that the meat easy to remove at the table.
  • Remove the outer shell, clean out the crab body, and break the meat into edible pieces. Keep the seafood aside.
  • Grind garlic, green chillies and coriander to a rough paste and keep aside. Heat oil in a wok and fry garlic, green chillies and coriander paste on medium heat, until the flavors are released.
  • Add seafood and stir - fry gently so the soft fish pieces don't break up. Add oyster sauce and fish sauce. Add more fish sauce and water if required to balance the spicy flavors.
  • Cover with a lid and simmer for a few minutes if the seafood needs more cooking. Add capsicum , onion, shallots and fresh herbs, stir - fry for 2 minutes. Remove from the heat.
  • Arrange on large shallow serving platter or bowl. Garnish with additional herbs of your choice. Serve with steaming rice.
