- Cut the carrots, onions, baby corn and potatoes into thick sticks of equal size.
- Heat oil in a deep frying pan.
- Mix chickpea flour (besan), rice flour, salt, chilli powder, chaat masala, ajwain and ginger paste to taste. Add some water to make thick batter.
- Mix chopped coriander and a pinch of baking powder to the batter.
- Check the oil by dropping a drop of the batter in the oil.
- Now coat the sticks with the batter and drop it one by one in the hot oil.
- Fry on medium heat till it turns golden brown.
- Take it out on paper towel to take out the excess oil.
- Serve hot with sweet tamarind chutney.
